Boucan by Hotel Chocolat- A foodie retreat in St Lucia where dining presents a unique and delicious culinary experience . With a commitment to sustainability and local produce diners can enjoy the Cacao that is used by the chefs in three ways: Firstly the fresh pulp is used in sorbets, cocktails and ice creams while the roasted cacao nibs are used as a spice and seasoning with everything from rich red meats to delicate seafood. Finally the famous St Lucian dark bitter chocolate is used in the more conventional desserts as well as dressing and dips!

 

Dining at Boucan

Start with: Kingfish Ceviche- A Kingfish fillet cooked in cacao pulp, coconut milk, chilli and lime pickle served with a cacao nib flatbread.

Indulge in: Confit of Duck- A leg and breast duck confit served with a local orange and Rabot Estate bitter dark chocolate sauce, white chocolate mashed potato, plantain crisps and carrots.

Something a bit lighter? Try the Mahi Mahi Salad served with a green coconut jelly, local pickled cucumber, flowering herbs, limed cacao nib oil dressing and creme fraiche.

Finish with: The Chocolate Genesis; a sumptuous nine stage tasting plate starting with truffles and rounding up with a shot of drinking chocolate.

Lodge at Boucan

Accommodation at Boucan by Hotel Chocolat is crafted from local wood and stone, the lodges are lovingly crafted and offer each guest a private verandah to watch the sunset from their rocking chairs!

Cocoa Estate

Whilst staying at Boucan by Hotel Chocolat guests can enjoy cocoa inspired spa treatments or partake in the popular ‘Tree to Bar Experience’ – where you choose your own cocoa pods and experience the whole chocolate making process. For the more active kind of traveller there are many hikes and walks throughout the Rabot Estate.
