Boucan by Hotel Chocolat, St Lucia

Boucan by Hotel Chocolat comprises of just 6 Lodges and 8 Luxe Lodges constructed from local wood and stone with high ceilings to allow the cooling breeze to flow through. The double bedrooms have king or super king size beds with ultra-high thread count cotton sheets. The lodges all have a private veranda with Rabot Rocking Chairs and all rooms have cabinets of chilled drinks. Bathrooms have polished granite double basin and open-sky rainforest showers to make up this intimate exclusive guest accommodation.

The 140 acre Cocoa Estate dates back to 1745 and is the oldest on the island. The cocoa groves have been rejuvenated and the original Estate House restored. Boucan is the creole name for cocoa drying shed.

Today the landscaped grounds are lit by solar powered lights and water has been harvested from the rain. The 50 foot pool is set high above the trees and is surrounded by lounge areas and a pool bar. Guests can experience unique massages using cocoa butter & cocoa nib exfoliating rub-downs.

Boucan is the Hotel's own restaurant, where guests can experience Cacao Cuisine. The Boucan offers a strong connection with cacao and chocolate. For over 3,000 years, cacao has been used as a savory ingredient and for 500 as a sweet ingredient. The menu explores both, with the chefs taking their inspiration from the fresh cacao growing all around the estate, together with amazing local fish and seafood, salad leaves, vegetables and plentiful fruit. However the cuisine is far from cocoa heavy. The menu often makes use of cacao as a light, subtle spice or as an infusion.
 
Unique to the Rabot Estate is the Tree to Bar Experience : an exclusive opportunity for guests to create their own chocolate - commencing with walking on the estate, selecting ripe cacao pods to cut from the tree and roasting them and culminating with the making of chocolate bars and truffles. Tours include all stages in between : visiting the seedling nursery, fermenting room, sun-drying, grinding mixing and lots of tasting!

A day in the life of a guest... plunge in the spectacular infinity pool, unwind with a cocoa butter massage, help with the cocoa harvest (dependent on time of year), hike to the top of the Rabot Ridge and experience some of the best views St Lucia has to offer, take a guided fruit tasting Safari - the estate grows its own guava, mango, banana, papaya and breadfruit to name but a few, attend a Tree to Bar experience chocolate making class, savour delicious desserts, spoil yourself with a unique sundowner cocktail with views to die for - the majestic Petit Piton is effectively 'back lit' by the setting sun. Explore the island - spend a day on the beach (you can be dropped off and picked up), take a powerboat trip to Marigot Bay, go deep sea fishing, scuba diving and snorkeling off the Pitons - a world class dive site. Take a sulphur springs bath, zip wire over the rainforest, visit the drive through volcano, climb the 2,600 feet Gros Pitons... 7 days just isn't enough!
